Quick & Easy Apple Crisp Overnight Oats
Quick and easy to prepare, these Apple Crisp Overnight Oats deliver a tasty and stress-free holiday breakfast. The rich aroma will draw even the sleepiest of family members to the table. Packed with creamy almond old-fashioned oats, comforting spices, and apples all sweetened with rich Canadian maple.

Ingredients
Apple Filling:
2 tbsp (30 mL) Crystal Margarine
3 apples, peeled, cored and chopped into 1/2-inch (1 cm) chunks
1/4 cup (60 mL) packed brown sugar
1/2 tsp (2 mL) ground cinnamon
1 tsp (5 mL) vanilla extract
Overnight Oats:
1/4 cup (60 mL) almond butter
2 tbsp (30 mL) pure maple syrup
1/4 tsp (1 mL) ground cinnamon
Pinch salt
2 cups (500 mL) almond milk
1 cup (250 mL) large-flake (old-fashioned) rolled oats
1/4 cup (60 mL) chia seeds
1/2 cup (125 mL) granola
Apple Crisp Overnight Oats Directions
1. Apple Filling: In large skillet set over medium heat, melt margarine. Next, add apples, brown sugar, cinnamon and vanilla; cook, stirring occasionally, for 10 to 15 minutes or until tender and softened. Then, let cool completely.
2. Overnight Oats: In large bowl, stir together almond butter, maple syrup, cinnamon and salt until smooth and blended. Slowly whisk in almond milk until blended and combined. Stir in oats and chia seeds. Let stand for 10 minutes.
3. Divide one-third apple mixture among 4 sealable jars or parfait glasses. Layer half overnight oats on top. Repeat layers once. Finally, top with remaining apple mixture.
4. Cover and refrigerate for 6 to 8 hours or until oats are tender and softened. Top evenly with granola before serving.
Tips: Honeycrisp, Cortland and Granny Smith apples work well in this recipe.
Serve with dollop of plant-based coconut yogurt on top if desired.
